Hash Brown Egg Casserole

This Hash Brown Egg Casserole is the perfect make-ahead brunch or meal prep breakfast. Packed with fluffy eggs, crispy hash browns, and melty cheese it’s comfort food that’s easy to prepare and loved by all.

Ingredients

  •     8 large eggs,
  •     1½ cups milk,
  •     2 cups frozen shredded hash browns (thawed),
  •     1 cup shredded cheddar cheese,
  •     ½ cup chopped bell peppers,
  •     ¼ cup chopped green onions,
  •     Salt, pepper, paprika to taste,
  •     Optional: diced cooked chicken, spinach, mushrooms

Instructions

  • Preheat oven to 375°F and grease a 9×13-inch baking dish.
  • Whisk eggs, milk, and spices in a bowl. Fold in hash browns, cheese, and veggies.
  • Pour mixture into baking dish and spread evenly.
  • Bake for 40–45 minutes until center is set and top is golden.
  • Let rest for 10 minutes before slicing and serving.
