  • 3 cups cooked shredded chicken
  • 1 cup fresh or canned pineapple, diced
  • 1/2 cup celery, finely chopped
  • 1/3 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/3 cup toasted macadamia nuts or almonds (optional)
  • 1/3 cup shredded coconut (optional)
  • 1/2 cup mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • 1. In a large bowl, add shredded chicken, pineapple, celery, red bell pepper, and red onion.
  • 2. If using, add toasted nuts and shredded coconut.
  • 3. In a separate bowl, whisk together mayonnaise, Greek yogurt, honey, lime juice, garlic powder, salt, and pepper.
  • 4. Pour dressing over the chicken mixture and toss until fully combined.
  • 5. Chill in the refrigerator for at least 30 minutes to allow flavors to blend.
  • 6. Serve in sandwiches, lettuce wraps, on croissants, or over greens.

  • Use rotisserie chicken for quick prep.
