Healthy Carrot Cake Oatmeal Cookies

A delightful healthier version of traditional carrot cake, these oatmeal cookies are packed with nutrients and flavor.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup grated carrots
  • 1/2 cup applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Mix the rolled oats and whole wheat flour in a large bowl.
  3. Add the grated carrots, applesauce, and honey (or maple syrup) to the dry ingredients and mix well.
  4. Sprinkle in the cinnamon and nutmeg, then add baking soda and salt, mixing thoroughly.
  5. Fold in the chopped walnuts and raisins if desired.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet with space between each cookie.
  7. Bake for 12-15 minutes until lightly golden around the edges.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For additional flavor, consider mixing in dark chocolate chips or dried cranberries.
