  • 2 cups old-fashioned oats
  • 1 cup pitted dates, finely chopped
  • 1/2 cup mashed banana (about 1 large)
  • 1/4 cup almond butter (or peanut butter)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional add-ins:
  • 1/4 cup chocolate chips
  • 1/4 cup chopped nuts
  • 2 tbsp chia seeds

Instructions

  • 1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • 2. In a bowl, combine oats, chopped dates, cinnamon, baking powder, and salt.
  • 3. In another bowl, mix mashed banana, almond butter, maple syrup, egg, and vanilla.
  • 4. Pour wet ingredients into dry ingredients and stir until combined.
  • 5. Fold in chocolate chips, nuts, or chia seeds if using.
  • 6. Scoop cookie dough onto the baking sheet using a spoon or small scoop.
  • 7. Flatten slightly with your fingertips.
  • 8. Bake 10–12 minutes or until edges are lightly golden.
  • 9. Cool on the pan for 5 minutes, then transfer to a rack to finish cooling.

  • Store cookies in an airtight container for up to 5 days.
  • Freeze for up to 2 months.
  • Use rolled oats instead of quick oats for the best texture.
