Healthy Greek Yogurt Blueberry Protein Muffins: Guilt-Free Morning Fuel

Fluffy, protein-packed muffins with Greek yogurt and fresh blueberries that deliver 12 grams of protein per serving.

  • 1½ cups whole wheat flour,
  • 1 scoop vanilla protein powder (30g),
  • 1 teaspoon baking powder,
  • ½ teaspoon baking soda,
  • ½ teaspoon salt,
  • 1 teaspoon cinnamon,
  • 1 cup plain Greek yogurt,
  • 2 large eggs,
  • ⅓ cup pure maple syrup,
  • ¼ cup melted coconut oil,
  • 1 teaspoon vanilla extract,
  • 1 cup fresh blueberries,
  • 1 tablespoon flour (for coating berries)

Instructions

  • Preheat oven to 350°F. Line 12-cup muffin tin with paper liners. Toss blueberries with 1 tablespoon flour to prevent sinking.
  • In large bowl, whisk together flour, protein powder, baking powder, baking soda, salt, and cinnamon until well combined.
  • In separate bowl, mix Greek yogurt, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
  • Fold wet ingredients into dry ingredients until just combined. Don’t overmix. Gently fold in floured blueberries.
  • Fill muffin cups ¾ full. Bake 18-22 minutes until tops spring back when touched. Cool in pan 5 minutes, then transfer to wire rack.
