Healthy Peanut Butter Banana Muffins

Delicious and nutritious muffins made with ripe bananas and creamy peanut butter, perfect for a healthy snack or breakfast.

  • 2 ripe bananas
  • 1/2 cup natural creamy or crunchy peanut butter
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup dairy-free milk of choice
  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add the peanut butter, eggs, maple syrup, vanilla extract, and dairy-free milk to the mashed bananas and mix until well combined.
  4. Mix the oat flour, baking powder, cinnamon, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the mini chocolate chips.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-22 minutes, or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use overripe bananas for the best sweetness. You can also customize with different add-ins like nuts or dried fruits.
