Herby Ricotta Stuffed Peppers

A delightful dish featuring creamy ricotta cheese and fresh herbs stuffed into sweet bell peppers, perfect for a light lunch or dinner.

  • 4 bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the ricotta cheese, Parmesan cheese, chopped herbs, garlic, salt, and pepper until well combined.
  4. Stuff each pepper with the ricotta mixture, packing it in gently.
  5. Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
  6. Bake in the preheated oven for about 30-35 minutes, or until the peppers are tender.
  7. Serve warm as a side dish.

Notes

Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 3 days. They can also be enjoyed cold.
