Hobo Casserole Ground Beef Recipe

A classic comfort food casserole made with seasoned ground beef, potatoes, onions, and creamy soup baked together for a hearty, budget-friendly dinner.

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  • 1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • 2. In a skillet, cook ground beef over medium heat until browned; drain excess fat.
  • 3. Season beef with garlic powder, onion powder, paprika, salt, and pepper.
  • 4. Layer sliced potatoes on the bottom of the baking dish.
  • 5. Top with sliced onions and cooked ground beef.
  • 6. In a bowl, whisk together cream of mushroom soup and milk.
  • 7. Pour mixture evenly over casserole.
  • 8. Cover with foil and bake for 45–55 minutes, or until potatoes are tender.
  • 9. Optional: uncover, sprinkle cheddar cheese on top, and bake an additional 5–10 minutes.
  • 10. Let rest 5 minutes before serving.

  • Substitute cream of chicken soup for a different flavor.
  • Add frozen mixed vegetables for extra nutrition.
  • Slice potatoes thinly for faster, more even cooking.
