Homemade Breakfast Hot Pockets Recipe

Flaky homemade breakfast pockets stuffed with eggs, cheese, and your choice of breakfast meats or vegetables. Perfect for on-the-go mornings.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup cold water
  • 4 large eggs, scrambled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked breakfast meat (bacon, sausage, or ham), chopped
  • 1/4 cup diced bell peppers or spinach (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  • 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • 2. In a bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
  • 3. Gradually add cold water and mix until dough forms. Chill for 20 minutes.
  • 4. Roll dough on a floured surface to 1/4-inch thickness and cut into rectangles.
  • 5. Fill each rectangle with scrambled eggs, cheese, meat, and vegetables.
  • 6. Fold dough over filling and seal edges with a fork.
  • 7. Brush tops with beaten egg.
  • 8. Bake 18–20 minutes or until golden brown.
  • 9. Serve warm.

Notes

Customize fillings to your liking.

These can be frozen before baking and cooked straight from frozen.

Use a pizza cutter for easier dough shaping.
