Honey Curry Roasted Cauliflower

A delightful blend of sweet and spicy, this Honey Curry Roasted Cauliflower makes the perfect side dish for any meal.

  • 2 medium heads of cauliflower, cut into florets
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the olive oil, honey, curry powder, garlic powder, salt, black pepper, and cayenne pepper (if using).
  3. Add your cauliflower florets to the bowl and toss until evenly coated.
  4. Spread the coated cauliflower florets in a single layer on a baking sheet lined with parchment paper.
  5. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, stirring halfway through.
  6. Remove from the oven and let cool for a few minutes; garnish with chopped fresh cilantro before serving.
