  • ½ cup panko breadcrumbs,
  • 1 large egg,
  • 1 tsp salt,
  • ½ tsp black pepper,
  • 1½ cups long-grain white rice,
  • 2½ cups low-sodium beef broth,
  • ⅓ cup honey,
  • ¼ cup low-sodium soy sauce,
  • 4 cloves garlic, minced,
  • 2 tbsp olive oil,
  • 1 tbsp rice vinegar,
  • 1 tsp fresh ginger, grated,
  • ½ tsp red pepper flakes,
  • 2 tbsp cornstarch,
  • 2 tbsp water

Instructions

  • Preheat oven to 375°F. Grease 9×13-inch baking dish. Rinse rice until water runs clear and drain thoroughly.
  • Mix ground beef, breadcrumbs, egg, salt, and pepper gently. Form into 1½-inch meatballs and place on parchment-lined baking sheet.
  • Bake meatballs for 15 minutes until lightly browned but not fully cooked.
  • Combine rice and beef broth in prepared baking dish. Nestle pre-baked meatballs into rice mixture.
  • Whisk together honey, soy sauce, garlic, olive oil, rice vinegar, ginger, and red pepper flakes. Pour evenly over meatballs and rice.
  • Cover with foil and bake 25 minutes. Remove foil and bake 5-10 minutes more until meatballs reach 165°F and rice is tender. Rest 5 minutes before serving.
