1½ lbs ground beef (80/20),
½ cup panko breadcrumbs,
1 large egg,
1 tsp salt,
½ tsp black pepper,
1½ cups long-grain white rice,
2½ cups low-sodium beef broth,
⅓ cup honey,
¼ cup low-sodium soy sauce,
4 cloves garlic, minced,
2 tbsp olive oil,
1 tbsp rice vinegar,
1 tsp fresh ginger, grated,
½ tsp red pepper flakes,
2 tbsp cornstarch,
2 tbsp water
Instructions
Preheat oven to 375°F. Grease 9×13-inch baking dish. Rinse rice until water runs clear and drain thoroughly.
Mix ground beef, breadcrumbs, egg, salt, and pepper gently. Form into 1½-inch meatballs and place on parchment-lined baking sheet.
Bake meatballs for 15 minutes until lightly browned but not fully cooked.
Combine rice and beef broth in prepared baking dish. Nestle pre-baked meatballs into rice mixture.
Whisk together honey, soy sauce, garlic, olive oil, rice vinegar, ginger, and red pepper flakes. Pour evenly over meatballs and rice.
Cover with foil and bake 25 minutes. Remove foil and bake 5-10 minutes more until meatballs reach 165°F and rice is tender. Rest 5 minutes before serving.
