Honey Tea Cake Loaf Recipe

A soft and tender honey tea cake loaf sweetened naturally with honey and finished with a delicate crumb. Perfect with a cup of tea or coffee for breakfast or afternoon snack.

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 2 large eggs, room temperature
  • 1/2 cup milk or buttermilk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest (optional)
  • Optional topping:
  • 12 tbsp honey for brushing

Instructions

  • 1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  • 2. In a bowl, whisk flour, baking powder, salt, and cinnamon.
  • 3. In another bowl, cream butter and honey until light and smooth.
  • 4. Beat in eggs one at a time.
  • 5. Mix in vanilla extract and lemon zest if using.
  • 6. Add dry ingredients alternately with milk, mixing just until combined.
  • 7. Pour batter into prepared loaf pan and smooth the top.
  • 8. Bake for 45–55 minutes, or until a toothpick comes out clean.
  • 9. Brush warm loaf with honey if desired.
  • 10. Cool before slicing and serving.

Notes

  • Do not overmix to keep the loaf tender.
  • Wrap tightly to keep moist for up to 3 days.
  • Pairs beautifully with black tea or chamomile.
