- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional)
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs, room temperature
- 1/2 cup milk or buttermilk
- 1 tsp vanilla extract
- 1 tbsp lemon zest (optional)
- Optional topping:
- 1–2 tbsp honey for brushing
- 1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- 2. In a bowl, whisk flour, baking powder, salt, and cinnamon.
- 3. In another bowl, cream butter and honey until light and smooth.
- 4. Beat in eggs one at a time.
- 5. Mix in vanilla extract and lemon zest if using.
- 6. Add dry ingredients alternately with milk, mixing just until combined.
- 7. Pour batter into prepared loaf pan and smooth the top.
- 8. Bake for 45–55 minutes, or until a toothpick comes out clean.
- 9. Brush warm loaf with honey if desired.
- 10. Cool before slicing and serving.
Notes
- Do not overmix to keep the loaf tender.
- Wrap tightly to keep moist for up to 3 days.
- Pairs beautifully with black tea or chamomile.
