Ingredients

Scale
  • 11/2 to 2 pounds chicken tenders (or 2 large boneless skinless chicken breasts sliced into 1-inch thick strips)
  • 11/2 cups all-purpose flour
  • 1 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. smoked paprika
  • 1 large egg + 2 tablespoons water (beaten)
  • Vegetable oil (canola or peanut oil, for frying)
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. kosher salt
  • 1/4 tsp. baking soda
  • 1/2 cup (1 stick) cold butter
  • 3/4 cups buttermilk
  • 1/4 cup unsalted butter (melted)
  • 1 cup honey
  • 2 tsp. crushed red pepper flakes
  • 1 Tbsp. apple cider vinegar

Instructions

  1. Prepare the dredging mixture: In a mixing bowl, combine 1-1/2 cups of flour, kosher salt, black pepper, garlic powder, and smoked paprika. Mix well.
  2. Pre-batter the chicken: In another bowl, whisk together the beaten egg and water until well combined. Dip each piece of chicken into the egg mixture, allowing any excess to drip off.
  3. Dredge the chicken: Coat each piece in the flour mixture and set aside on a plate.
  4. Heat the oil: Pour in about 1-2 inches of vegetable oil in a deep skillet or frying pan and heat over medium-high heat until it reaches about 350°F (175°C).
  5. Fry the chicken: Carefully place the chicken pieces into the hot oil, frying for about 4-5 minutes on each side or until golden brown and cooked through.
  6. Drain the chicken: Place the fried chicken on a paper towel-lined plate to drain excess oil.
  7. Preheat the oven: Begin by preheating your oven to 450°F (230°C).
  8. Make the dry mixture: In a large bowl, combine 2 cups of all-purpose flour, baking powder, kosher salt, and baking soda. Stir until well mixed.
  9. Cut in the butter: Use a pastry cutter or your fingers to cut the cold butter into the dry mixture until it resembles coarse crumbs.
  10. Add buttermilk: Pour in the buttermilk and gently stir until just combined.
  11. Shape the dough: Turn the dough onto a floured surface and knead gently 3-4 times until it comes together.
  12. Cut the biscuits: Use a biscuit cutter or a glass to cut out circles from the dough.
  13. Bake the biscuits: Place them on a baking sheet, brush the tops with melted butter, and bake for about 12-15 minutes or until golden brown.
  14. Combine ingredients for hot honey: In a small saucepan over low heat, combine honey, crushed red pepper flakes, and apple cider vinegar.
  15. Heat gently until warm and combined.
  16. Construct your biscuits: Slice the biscuits in half, place a piece of fried chicken on the bottom half, and drizzle with hot honey before topping with the other half.

Notes
