  • 2 cups cottage cheese (full-fat or 2%)
  • 2 ripe avocados, sliced

  • ¼ cup honey
  • 2 tbsp hot sauce
  • 1 tsp chili flakes)

Instructions

  • 1. Preheat oven to 425°F. Pierce sweet potatoes with fork. Place on foil-lined baking sheet. Bake 45-55 minutes until fork-tender. Cool slightly, cut lengthwise, fluff flesh.
  • 2. Meanwhile, heat olive oil in large skillet over medium-high. Add onion, cook 4 minutes until softened. Add garlic, cook 30 seconds.
  • 3. Add ground beef, breaking apart. Cook until browned (7-8 minutes). Drain fat if needed. Stir in chili powder, cumin, paprika, salt, pepper. Cook 2 minutes until fragrant. Remove from heat.
  • 4. For hot honey: warm honey, hot sauce, chili flakes in microwave 20 seconds. Stir. (Or use store-bought.)
  • 5. Assemble bowls: divide sweet potato halves between 4 bowls. Top each with ½ cup cottage cheese, ¼ seasoned beef, avocado slices. Drizzle generously with hot honey.
