Iced Oatmeal Cookies

Delightful iced oatmeal cookies with a chewy texture and sweet icing, perfect for any occasion.

  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (at room temperature)
  • 1 & 1/4 cup old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until well incorporated.
  4. Mix the all-purpose flour, oats, cinnamon, nutmeg, baking soda, and salt in a separate bowl. Gradually combine with the wet ingredients until fully mixed.
  5. Scoop equal portions of cookie dough onto the prepared baking sheet, pressing down each ball to about 1 inch thick.
  6. Bake for 10 minutes until slightly undercooked in the center, then cool on the baking sheet for 20 minutes.
  7. Whisk together powdered sugar, milk, and vanilla extract for icing until smooth.
  8. Ice the cooled cookies with icing and allow it to set for a few minutes before serving.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
