Irish Car Bomb Brownies

A tasty twist on a classic dessert, combining rich chocolate brownies with the flavors of the popular Irish drink.

  • 1 cup Guinness stout
  • 1 cup butter
  • 2 cups sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 ounces chocolate, chopped
  • 1/2 cup Jameson Irish whiskey
  • 1 cup heavy cream
  • 1 cup Baileys Irish Cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan over medium heat, combine the Guinness and butter until melted. Stir in the sugars until combined. Let cool slightly.
  3. Whisk in the eggs and vanilla extract until smooth.
  4. In a separate bowl, mix the flour, cocoa powder, baking powder, and salt. Gradually stir this mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. For the ganache, heat the heavy cream until hot but not boiling. Remove from heat, add chopped chocolate and Jameson, and stir until smooth.
  7. For the Baileys buttercream, beat butter on medium speed, then gradually add powdered sugar and Baileys until creamy.
  8. Once the brownies are cooled, spread the Baileys buttercream on top, drizzle with Jameson ganache, and cut into squares.

Notes

Ensure butter and eggs are at room temperature for better mixing. Do not overmix the brownie batter for moist brownies.
