Italian Love Cake

A classic Italian Love Cake with magical layers rich chocolate cake on the bottom, a creamy ricotta filling in the center, and fluffy chocolate pudding whipped topping on top for a decadent crowd-pleasing dessert.

  • Cake Layer:
  • 1 box chocolate cake mix
  • Ingredients listed on cake mix box

  • Ricotta Layer:
  • 2 lbs ricotta cheese
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  •  
  • Topping:
  • 1 box instant chocolate pudding mix (3.9 oz)
  • 1 cup cold milk
  • 1 tub whipped topping

Instructions

  • 1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • 2. Prepare chocolate cake batter according to package directions and pour into prepared dish.
  • 3. In a bowl, beat ricotta cheese, sugar, eggs, and vanilla until smooth.
  • 4. Carefully spoon ricotta mixture evenly over cake batter.
  • 5. Bake for 55–60 minutes until center is set.
  • 6. Cool cake completely.
  • 7. Prepare pudding by whisking pudding mix with cold milk until thick.
  • 8. Fold whipped topping into pudding until smooth.
  • 9. Spread pudding mixture over cooled cake.
  • 10. Refrigerate at least 2 hours before slicing and serving.

Notes

  • Cake layers reverse during baking this is normal.
  • Best served chilled for clean slices.
  • Garnish with chocolate shavings if desired.
