  • 4 Slices Genoa Salami
  • 4 Slices Mortadella
  • 4 Slices Sopressata
  • 4 Slices Pepperoni
  • 4 Slices Provolone (omit for dairy-free option)
  • Paleo Lime Mayo or store-bought mayo
  • Shredded Lettuce
  • Extra toppings: banana peppers, jalapeño peppers, roasted red peppers, black olives
  • Avocado Oil or Olive Oil
  • Apple Cider Vinegar
  • Italian Seasoning
  • Toothpicks

Instructions

  1. Layer the Meats: Begin by laying out the meat slices from largest to smallest.
  2. Spread the Mayo: Spread a thin layer of mayo on the stacked meats, avoiding the top of the largest piece.
  3. Add Cheese and Veggies: Place provolone on the mayo and shredded lettuce on the lower half, adding extra toppings as desired.
  4. Roll it Up: Starting from the bottom, tightly roll the meat and fillings, pushing in any extras.
  5. Secure the Roll: Use a toothpick to secure the roll-up at the end.
  6. Make the Dipping Sauce: Mix 2 parts oil and 1 part apple cider vinegar with Italian seasoning.
  7. Serve and Enjoy: Dip the roll-ups in the sauce and enjoy!

Notes

Store leftovers wrapped individually in plastic in the fridge for up to a week. These make great options for kids’ lunches.
