Sweet and Spicy Jalapeno Raspberry Chicken

Instructions

  1. Prepare the Glaze: In a medium bowl, mix the raspberry preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Stir until combined and set aside.
  2. Season the Chicken: In another bowl, season the boneless skinless chicken thighs with kosher salt, black pepper, and chili powder. Make sure each piece is well-coated with the seasonings.
  3. Heat the Pan: In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Ensure the oil is hot before adding the chicken.
  4. Sear the Chicken: Place the seasoned chicken thighs in the skillet. Cook for about 5 minutes on one side until golden brown. Turn the chicken over and cook for another 5 minutes to brown the other side.
  5. Add the Glaze: Once the chicken is browned, reduce the heat to medium-low. Pour the raspberry glaze over the chicken and let it simmer for about 5 minutes.
  6. Add Jalapenos and Raspberries: Sprinkle the thinly sliced jalapeno pepper over the chicken and add in the fresh raspberries. Cook for an additional 2-3 minutes until the jalapenos soften slightly.
  7. Check for Doneness: Ensure the chicken is fully cooked, with an internal temperature of at least 165°F (75°C).
