Juicy Street Corn Pasta Salad

A refreshing pasta salad with vibrant street corn flavors, creamy dressing, and juicy tomatoes. Perfect for picnics and gatherings.

  • 8 oz pasta (fusilli or rotini)
  • 1 cup corn kernels (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by bringing a pot of salted water to a boil. Add the pasta and cook until al dente. Drain and rinse under cold water.
  2. Prepare the ingredients by cooking fresh corn (if using), dicing the red onion, halving the tomatoes, and chopping cilantro.
  3. Mix the cooled pasta, corn, tomatoes, onion, and cilantro in a large bowl.
  4. Make the dressing by whisking together mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Combine the dressing with the pasta salad mixture and gently toss to coat.
  6. Chill for at least 30 minutes in the refrigerator to meld flavors.
