Keto Chicken Quesadilla

A delicious and satisfying low-carb twist on traditional quesadillas, packed with protein and flavor.

  • 2 cooked chicken breasts, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup shredded zucchini
  • 1 large egg
  • Salt and pepper to taste
  • Cooking spray or oil for the pan

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine shredded chicken, cheese, zucchini, egg, and seasonings. Mix well.
  2. Prepare the Pan: Heat a non-stick skillet over medium heat and grease it with cooking spray or oil.
  3. Create the Shell: Pour half of the mixture into the skillet and shape it into a circular shell.
  4. Cook the First Side: Cook for 3-4 minutes until golden brown.
  5. Flip Carefully: Turn the shell and cook the other side for another 3-4 minutes until golden.
  6. Add the Filling: Place remaining mixture on one side of the shell, fold it over, and cook for 2-3 minutes until cheese melts.
  7. Serve: Slide the quesadilla onto a plate, cut into wedges, and enjoy hot.

Notes

Best served immediately. Consider adding guacamole or sour cream for extra flavor.
