  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1/2 cup key lime juice (freshly squeezed if possible)
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • Zest of 1 key lime (optional for garnish)
  • Extra whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) if you wish to bake the graham cracker crust for extra crunch.
  2. Mix graham cracker crumbs with melted butter and a pinch of salt until well combined.
  3. Press this mixture into a 9-inch pie pan or a baking dish in an even layer.
  4. Bake in the preheated oven for about 8-10 minutes, or until golden brown. Let it cool completely.
  5. Beat the softened cream cheese with an electric mixer until it is smooth and creamy.
  6. Add powdered sugar gradually and continue mixing until combined and smooth.
  7. Stir in sour cream, key lime juice, and vanilla extract until well blended.
  8. Whip the heavy cream in a separate mixing bowl until soft peaks form, about 2-3 minutes.
  9. Fold the whipped cream into the cream cheese mixture in batches.
  10. Assemble the parfaits by layering graham cracker crumbs and cream cheese filling in clear cups.
  11. Finish with a dollop of whipped cream and optional lime zest on top.
  12. Refrigerate the parfaits for at least 2 hours before serving.
  13. Serve chilled, adding more whipped cream and garnish as desired.
