- 1 lb kielbasa sausage, sliced
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 cup heavy cream or half & half
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- 1. Heat olive oil in a large pot over medium heat. Brown kielbasa slices, remove and set aside.
- 2. In the same pot, sauté onion, garlic, carrots, and celery until softened.
- 3. Add potatoes, chicken broth, and thyme. Bring to a boil, then simmer 20 minutes until potatoes are tender.
- 4. Add browned kielbasa back to pot. Stir in heavy cream and simmer 5 more minutes.
- 5. Season with salt and pepper. Garnish with fresh parsley and serve hot.

- Use smoked kielbasa for best flavor.
- Blend part of soup for creamier texture.
