Leftover Cranberry Turkey Sandwich Recipe

A classic leftover turkey sandwich layered with tender roasted turkey, tangy cranberry sauce, melty cheese, and crisp greens. The perfect way to transform holiday leftovers into a satisfying meal.

Ingredients

  • 2 slices bread (sourdough, multigrain, or sandwich bread)
  • 45 oz leftover cooked turkey, sliced or shredded
  • 2 tbsp cranberry sauce
  • 1 slice provolone, Swiss, or cheddar cheese (optional)
  • 1 tbsp mayonnaise
  • 1/2 tsp Dijon mustard (optional)
  • Handful of lettuce or baby spinach
  • Salt and black pepper, to taste
  • Butter, for grilling (optional)

Instructions

  • 1. Spread mayonnaise on one side of each slice of bread. Add Dijon mustard if using.
  • 2. Layer turkey evenly on one slice of bread and season lightly with salt and pepper.
  • 3. Top turkey with cranberry sauce, cheese if using, and lettuce.
  • 4. Close sandwich with remaining bread slice.
  • 5. (Optional) Butter the outside of the bread and grill in a skillet over medium heat until golden and cheese is melted.
  • 6. Slice in half and serve warm or cold.

Notes

  • Add stuffing or mashed potatoes for an extra holiday twist.
  • Swap mayo for cream cheese for a richer flavor.
  • Perfect served with soup or chips.
