Leftover Mashed Potato Pancakes with Cheese

  • 1 cup shredded cheese (Cheddar, mozzarella, or your favorite cheese)
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/4 cup chopped green onions or chives (optional)

Instructions

  1. Prepare the mixture: In a large bowl, combine the leftover mashed potatoes, shredded cheese, flour, and the egg. Mix well until all ingredients are combined. The mixture should be thick but easy to mold. If it’s too wet, you can add a little more flour until you achieve a workable consistency.
  2. Add flavor: If you like, mix in the chopped green onions or chives for added flavor. Season the mixture with salt and pepper according to your taste.
  3. Shape the pancakes: Using your hands, take a handful of the mixture and form it into a patty. The size can be to your preference, but making them about 3 to 4 inches wide works great for even cooking. Repeat this for the remaining mixture.
  4. Heat the oil: In a large skillet, heat about 1/4 inch of oil over medium heat. Make sure the oil is hot enough for frying. You can test this by dropping a small piece of the potato mixture into the oil; if it sizzles, you are good to go.
  5. Fry the pancakes: Carefully place the patties in the hot oil. Do not overcrowd the pan; fry them in batches if necessary. Cook each side for about 3 to 4 minutes or until they are golden brown and crispy.
  6. Drain excess oil: Once cooked, remove the pancakes from the oil and place them on a paper towel-lined plate to absorb any excess oil.
  7. Serve warm: Enjoy your leftover mashed potato pancakes while they are warm and crispy, with your favorite dipping sauce or toppings.

Notes
