Lemon Cheesecake Bites

Delightful lemon cheesecake bites that combine zesty lemon flavors with creamy cheesecake. Perfect for parties and gatherings.

  • 1 cup lemon cake mix
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a mini muffin pan with mini paper liners.
  3. Combine the lemon cake mix, melted butter, and egg in a mixing bowl until smooth.
  4. Spoon about a tablespoon of the mixture into each muffin liner, filling halfway.
  5. Beat the cream cheese, powdered sugar, vanilla, lemon juice, and lemon zest in another bowl until smooth.
  6. Spoon the cheesecake mixture on top of the cake mix in each liner.
  7. Bake for 15-18 minutes until set and slightly golden.
  8. Cool in the muffin pan for a few minutes, then transfer to a wire rack to cool completely.
