- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 lb chicken breast or thighs
- 1 cup pearl couscous
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Zest of 1 lemon
- Juice of 1 lemon
- Fresh parsley or dill for garnish
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add onion, carrots, and celery; cook until softened.
- 3. Stir in garlic and cook until fragrant.
- 4. Pour in chicken broth and bring to a boil.
- 5. Add chicken, oregano, thyme, salt, and pepper.
- 6. Reduce heat and simmer for 15 minutes until chicken is cooked through.
