Lemon Chicken Couscous Soup: How to Make This Cozy 30-Minute Meal

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 lb chicken breast or thighs
  • 1 cup pearl couscous
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh parsley or dill for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, carrots, and celery; cook until softened.
  • 3. Stir in garlic and cook until fragrant.
  • 4. Pour in chicken broth and bring to a boil.
  • 5. Add chicken, oregano, thyme, salt, and pepper.
  • 6. Reduce heat and simmer for 15 minutes until chicken is cooked through.
  • 7. Remove chicken, shred it, and return to the pot.
  • 8. Stir in couscous and simmer for 8–10 minutes until tender.
  • 9. Add lemon zest and lemon juice.
  • 10. Taste and adjust seasoning.
  • 11. Garnish with fresh herbs and serve hot.

Notes

  • Add spinach or kale at the end for extra greens.
  • Adjust lemon juice to taste.
  • Soup thickens as it sits add more broth when reheating.
