  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg, lemon zest, and lemon juice; mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Roll the balls in powdered sugar until fully coated.
  6. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the cookies are set and the tops are crinkled.
  8. Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them after cooling.
