  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 1/2 tsp black pepper
  • 1 lb boneless skinless chicken breast or thighs
  • 8 cups chicken broth
  • 3/4 cup white or jasmine rice
  • 1 tsp salt (adjust to taste)
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 2 tbsp fresh parsley or dill, chopped (optional)

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, carrots, and celery; sauté for 4–5 minutes until softened.
  • 3. Stir in garlic, ginger, turmeric, and black pepper; cook 30 seconds until fragrant.
  • 4. Add chicken and chicken broth. Bring to a gentle boil.
  • 5. Reduce heat and simmer for 15 minutes until chicken is cooked through.
  • 6. Remove chicken, shred it with forks, and return to the pot.
  • 7. Stir in rice, salt, lemon juice, and lemon zest.
  • 8. Simmer for 15–18 minutes until rice is tender.
  • 9. Adjust seasoning as needed and garnish with herbs before serving.

Notes

  • Brown rice may be used but requires extra cooking time.
  • Add more broth when reheating, as rice absorbs liquid.
  • For extra immune support, add a pinch of cayenne or extra ginger.
