Lemon Ricotta Pancakes

Light and fluffy pancakes with a refreshing lemon flavor, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Butter or oil for cooking

Instructions

  1. Prepare Wet Ingredients: In a mixing bowl, add ricotta cheese, eggs, milk, lemon juice, and lemon zest. Whisk until smooth.
  2. Combine Dry Ingredients: In another bowl, mix flour, baking powder, sugar, and salt.
  3. Mix Wet and Dry Ingredients: Gradually add dry ingredients to wet ingredients. Stir gently until just combined.
  4. Heat the Skillet: Place a skillet on medium heat and add butter or oil.
  5. Cook the Pancakes: Pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Serve Warm: Serve with maple syrup, fresh fruit, or powdered sugar.

Notes

For best results, use fresh lemon juice and zest. Avoid overmixing for fluffier pancakes.
