  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 1/2 cups unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup powdered sugar (for glaze)
  • 5 teaspoons lemon juice (for glaze)
  • Drops of vanilla (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, lemon juice, and lemon zest. Mix until blended.
  5. Mix the flour, baking powder, salt, and baking soda in a separate bowl.
  6. Combine the dry ingredients into the wet mixture, stirring gently until just combined.
  7. Form small dough balls and place them on the prepared baking sheet, spaced 1.5 inches apart.
  8. Bake for about 7 minutes until the edges are lightly golden.
  9. Cool the cookies on the baking sheet for 10 minutes, then transfer them to a cooling rack.
  10. Prepare the glaze by mixing powdered sugar and lemon juice until smooth.
  11. Drizzle the glaze over the cooled cookies and let it set before serving.

Notes

For best results, use fresh lemons for zest and juice. Adjust the glaze consistency if needed.
