- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 1/2 cups red lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 bay leaf
- Juice of 2 lemons
- 3 cups fresh spinach
- Salt and pepper to taste
- Fresh parsley for garnish
- 1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, celery, and garlic until softened.
- 2. Add cumin, coriander, and turmeric; stir for 1 minute.
- 3. Add red lentils, vegetable broth, and bay leaf. Bring to a boil.
- 4. Reduce heat and simmer 20-25 minutes until lentils are tender.
- 5. Remove bay leaf. Stir in spinach until wilted.
- 6. Remove from heat and stir in lemon juice. Season with salt and pepper.
- 7. Garnish with fresh parsley and serve warm.
Notes
- Use green lentils for heartier texture.
- Blend half for creamier consistency.
