Lemony Lentil Soup

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 bay leaf
  • Juice of 2 lemons
  • 3 cups fresh spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  • 2. Add cumin, coriander, and turmeric; stir for 1 minute.
  • 3. Add red lentils, vegetable broth, and bay leaf. Bring to a boil.
  • 4. Reduce heat and simmer 20-25 minutes until lentils are tender.
  • 5. Remove bay leaf. Stir in spinach until wilted.
  • 6. Remove from heat and stir in lemon juice. Season with salt and pepper.
  • 7. Garnish with fresh parsley and serve warm.

Notes

  • Use green lentils for heartier texture.
  • Blend half for creamier consistency.
  • Freezes perfectly for up to 3 months.
  • Add coconut milk for extra creaminess.
