Lime Chicken Fiesta

A vibrant and flavorful dish featuring juicy lime-marinated chicken topped with fresh avocado and cilantro.

  • 1 pound chicken breasts
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Marinate the chicken breasts in olive oil, lime juice, chili powder, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Once done, remove from the grill and let rest for a few minutes.
  5. Top with diced avocado and chopped cilantro before serving.

Notes

You can serve this dish on its own, with rice or mixed greens, or wrapped in tortillas for tacos.
