Loaded Cornbread Casserole is a creamy, cheesy, and savory dish packed with corn, bacon, and peppers perfect for a comforting side or main.

Ingredients

  • 1 box cornbread mix
  • 1 can creamed corn
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup sour cream
  • 2 eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • 1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  • 2. In a large bowl, mix cornbread mix, creamed corn, corn kernels, sour cream, eggs, cheese, bacon, peppers, and onions.
  • 3. Season with salt and pepper.
  • 4. Pour mixture into prepared baking dish and spread evenly.
  • 5. Bake for 30–35 minutes, until top is golden and set.
  • 6. Let cool 5 minutes before serving.

Notes

  • Add jalapeños for a spicy kick.
  • Can be made a day ahead and reheated.
