- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 2 large eggs
- 2 tbsp melted butter
- 1/2 cup cooked bacon, chopped
- 1/2 cup scrambled eggs
- 1/4 cup shredded cheddar cheese
- Maple syrup, for drizzling

- 1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- 2. In another bowl, combine buttermilk, eggs, and melted butter.
- 3. Pour wet ingredients into dry ingredients and mix until just combined.
- 4. Heat a lightly greased skillet over medium heat.
- 5. Pour small rounds of batter to form mini pancakes and cook until bubbles form; flip and cook until golden.
- 6. Top each pancake with scrambled eggs, bacon, and cheddar cheese.
- 7. Fold like tacos and drizzle with maple syrup before serving.
