Loaded Pancake Tacos

Fluffy pancakes turned into breakfast tacos loaded with eggs, bacon, and all your favorite toppings for a fun, delicious morning twist.

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup scrambled eggs
  • 1/4 cup shredded cheddar cheese
  • Maple syrup, for drizzling
  • Butter or oil for cooking

Instructions

  • 1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • 2. In another bowl, combine buttermilk, eggs, and melted butter.
  • 3. Pour wet ingredients into dry ingredients and mix until just combined.
  • 4. Heat a lightly greased skillet over medium heat.
  • 5. Pour small rounds of batter to form mini pancakes and cook until bubbles form; flip and cook until golden.
  • 6. Top each pancake with scrambled eggs, bacon, and cheddar cheese.
  • 7. Fold like tacos and drizzle with maple syrup before serving.
