Instructions

  1. Prepare the eggplant by washing it thoroughly, slicing it into rounds, and sprinkling with salt.
  2. Let the eggplant sit for 20-30 minutes to draw out moisture.
  3. Rinse the eggplant under cold water and pat dry with paper towels.
  4. In a bowl, toss the eggplant with olive oil and spices until evenly coated.
  5. Preheat the air fryer to 375°F (190°C).
  6. Cook the eggplant in a single layer for 15-20 minutes, shaking halfway through.
  7. Check for doneness, ensuring the eggplant is golden and crispy.
