4 cups steamed broccoli florets, chopped,
1½ cups sharp cheddar cheese, shredded,
½ cup mozzarella cheese, shredded,
2 large eggs, beaten,
¼ cup almond flour,
2 cloves garlic, minced,
½ teaspoon onion powder,
¼ teaspoon black pepper,
½ teaspoon salt
Instructions
Steam broccoli florets for 4-5 minutes until tender-crisp. Transfer to ice water, drain thoroughly, and pat completely dry. Chop into small uniform pieces.
In large bowl, combine chopped broccoli, both cheeses, beaten eggs, almond flour, garlic, onion powder, salt, and pepper. Mix until well combined and let rest 10 minutes.
Preheat oven to 400°F. Line baking sheet with parchment paper.
Using ¼-cup measure, scoop mixture onto prepared baking sheet. Gently press into round patties about ½-inch thick, leaving 2 inches between each round.
Bake for 15-18 minutes, flipping halfway through, until edges are golden brown and centers are set. Internal temperature should reach 165°F.
Cool for 3-5 minutes before serving to allow structure to set. Serve warm with your favorite low-carb dipping sauce.
