1/2 cup milk
1 pound breakfast sausage, cooked and crumbled
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
12 (10-inch) flour tortillas
1 tablespoon vegetable oil
Salt and pepper to taste
Instructions
Prepare the Egg Mixture: Start by cracking the eggs into a large mixing bowl. Add the milk, a pinch of salt, and a few cracks of pepper. Using a whisk, mix everything together until well combined.
Cook the Eggs: Heat the vegetable oil in a non-stick skillet set to medium heat. Once the oil is hot, pour in the egg mixture and stir gently until set but still moist.
Prepare the Tortillas: Warm the tortillas slightly in a microwave or on a hot skillet for about 10 seconds per side.
Assemble the Burritos: Place a portion of scrambled eggs on each tortilla, add sausage, then cheese.
Roll the Burritos: Fold the sides of the tortilla over the filling, then roll it up tightly.
Wrap and Store: Wrap each burrito individually in plastic wrap and aluminum foil, then place in a freezer-safe bag.
Freeze: Lay the bag flat in your freezer. These burritos can be frozen for up to 3 months.
Reheat When Ready to Eat: Remove foil and plastic wrap, wrap in a damp paper towel, and microwave on high for 1-2 minutes.
