Freezer Breakfast Burritos

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Egg Mixture: Start by cracking the eggs into a large mixing bowl. Add the milk, a pinch of salt, and a few cracks of pepper. Using a whisk, mix everything together until well combined.
  2. Cook the Eggs: Heat the vegetable oil in a non-stick skillet set to medium heat. Once the oil is hot, pour in the egg mixture and stir gently until set but still moist.
  3. Prepare the Tortillas: Warm the tortillas slightly in a microwave or on a hot skillet for about 10 seconds per side.
  4. Assemble the Burritos: Place a portion of scrambled eggs on each tortilla, add sausage, then cheese.
  5. Roll the Burritos: Fold the sides of the tortilla over the filling, then roll it up tightly.
  6. Wrap and Store: Wrap each burrito individually in plastic wrap and aluminum foil, then place in a freezer-safe bag.
  7. Freeze: Lay the bag flat in your freezer. These burritos can be frozen for up to 3 months.
  8. Reheat When Ready to Eat: Remove foil and plastic wrap, wrap in a damp paper towel, and microwave on high for 1-2 minutes.
