These Maple Dijon Chicken & Sweet Potato Bowls are a wholesome, balanced meal with roasted sweet potatoes, tender chicken, and a flavorful maple-dijon glaze. Perfect for meal prep or a cozy dinner.

  • 2 large chicken breasts, cut into cubes
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 1/2 tbsp Dijon mustard
  • 1 garlic clove, minced
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Preheat oven to 400°F (200°C).
  • 2. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  • 3. Meanwhile, whisk together maple syrup, Dijon mustard, garlic, smoked paprika, and remaining olive oil.
  • 4. Season chicken with salt and pepper, then toss in half of the maple-dijon sauce.
  • 5. Remove baking sheet, add chicken and broccoli alongside sweet potatoes.
  • 6. Drizzle with remaining sauce and toss gently.
  • 7. Roast for another 20–25 minutes until chicken is cooked through and sweet potatoes are tender.
  • 8. Garnish with fresh parsley and serve warm.

  • Substitute broccoli with Brussels sprouts or green beans.
