- 2 large chicken breasts, cut into cubes
- 2 medium sweet potatoes, peeled and cubed
- 2 cups broccoli florets
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 1/2 tbsp Dijon mustard
- 1 garlic clove, minced
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
- 1. Preheat oven to 400°F (200°C).
- 2. Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- 3. Meanwhile, whisk together maple syrup, Dijon mustard, garlic, smoked paprika, and remaining olive oil.
- 4. Season chicken with salt and pepper, then toss in half of the maple-dijon sauce.
- 5. Remove baking sheet, add chicken and broccoli alongside sweet potatoes.
- 6. Drizzle with remaining sauce and toss gently.
- 7. Roast for another 20–25 minutes until chicken is cooked through and sweet potatoes are tender.
- 8. Garnish with fresh parsley and serve warm.
