Maple Mustard Roasted Carrots are tender, caramelized, and packed with sweet-savory flavor an easy side dish perfect for weeknights or holiday dinners.

Ingredients

  • 2 lbs carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp whole grain mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  • 1. Preheat oven to 400°F (200°C).
  • 2. In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, whole grain mustard, garlic powder, salt, and pepper.
  • 3. Add carrots and toss until evenly coated.
  • 4. Spread carrots in a single layer on a parchment-lined baking sheet.
  • 5. Roast for 25–30 minutes, tossing halfway, until golden and caramelized.
  • 6. Remove from oven, garnish with parsley, and serve warm.
