Ingredients

Scale
  • 3 ripe pears, halved and cored
  • 2 tbsp pure maple syrup
  • 1 tbsp melted butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup ricotta cheese
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1 tbsp heavy cream or milk (optional, for texture)
  • Chopped walnuts or pecans, for garnish
  • Extra drizzle of maple syrup, for serving

Instructions

  • 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • 2. In a small bowl, mix melted butter, maple syrup, cinnamon, and nutmeg.
  • 3. Brush the mixture over pear halves and place them cut-side up on the baking sheet.
  • 4. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
  • 5. Meanwhile, in a medium bowl, whisk ricotta with honey, vanilla, and cream until smooth and fluffy.
  • 6. Spoon whipped ricotta onto serving plates and top with warm roasted pears.
  • 7. Drizzle with extra maple syrup and garnish with nuts before serving.

Notes

  • Bosc or Anjou pears work best for roasting.
  • For a dairy-free version, use whipped coconut yogurt instead of ricotta.
  • Add a sprinkle of sea salt for a sweet-salty flavor balance.
  • Delicious served warm or chilled.
