Ingredients

  • 12 oz linguine or fettuccine
  • 1 lb large shrimp peeled deveined
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 1/3 cup sun-dried tomatoes chopped
  • 1 tbsp tomato paste
  • 1/4 tsp red pepper flakes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup Parmesan grated
  • 1 tsp Italian seasoning
  • 2 cups baby spinach
  • Salt and pepper
  • Fresh basil

Instructions

  • 1. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, drain.
  • 2. Season shrimp with salt, pepper, Italian seasoning. Heat 1 tbsp oil in skillet, cook shrimp 2 minutes per side. Remove.
  • 3. Add remaining oil, sauté garlic, sun-dried tomatoes, red pepper flakes 1 minute. Add tomato paste, cook 1 minute.
  • 4. Stir in cream, broth. Simmer 5 minutes until thickened. Add spinach until wilted.
  • 5. Stir in Parmesan until melted. Add pasta and shrimp, toss with reserved pasta water. Garnish with basil.

Notes

  • Use pasta water to adjust sauce consistency.
  • Don’t overcook shrimp – they continue cooking in sauce.
  • Leftovers keep 2 days; add cream when reheating.
