- 12 oz linguine or fettuccine
- 1 lb large shrimp peeled deveined
- 2 tbsp olive oil
- 4 garlic cloves minced
- 1/3 cup sun-dried tomatoes chopped
- 1 tbsp tomato paste
- 1/4 tsp red pepper flakes
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup Parmesan grated
- 1 tsp Italian seasoning
- 2 cups baby spinach
- Salt and pepper
- Fresh basil
- 1. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, drain.
- 2. Season shrimp with salt, pepper, Italian seasoning. Heat 1 tbsp oil in skillet, cook shrimp 2 minutes per side. Remove.
- 3. Add remaining oil, sauté garlic, sun-dried tomatoes, red pepper flakes 1 minute. Add tomato paste, cook 1 minute.
- 4. Stir in cream, broth. Simmer 5 minutes until thickened. Add spinach until wilted.
- 5. Stir in Parmesan until melted. Add pasta and shrimp, toss with reserved pasta water. Garnish with basil.
Notes
- Use pasta water to adjust sauce consistency.
- Don’t overcook shrimp – they continue cooking in sauce.
- Leftovers keep 2 days; add cream when reheating.
