Instructions

  • 1. Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots; sauté until softened, about 5 minutes.
  • 2. Pour in chicken broth and white wine, bring to a boil.
  • 3. Add pasta, cook until al dente according to package instructions.
  • 4. Stir in shredded chicken, sun-dried tomatoes, and Italian seasoning. Simmer 5 minutes.
  • 5. Reduce heat; stir in heavy cream, Parmesan cheese, and chopped spinach.
  • 6. Simmer 3-5 minutes until slightly thickened. Season with salt and pepper.
