Matilda’s Chocolate Cake

A rich, moist, and full of chocolate flavor cake, perfect for any celebration.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter (softened)
  • 3 ½ cups powdered sugar
  • 1 cup unsweetened cocoa powder (for frosting)
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix on medium speed for 2 minutes.
  4. Stir in boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. For the frosting, beat the butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with heavy cream and vanilla. Beat until smooth and creamy.
  9. Once the cakes are cool, spread frosting between the layers and on the top and sides of the cake.
  10. Swirl the frosting beautifully and enjoy!

Notes

Make sure to measure ingredients accurately for best results. Use room temperature eggs and milk. Don’t skip the boiling water step to ensure the cake is moist.
