  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

  • 3 cups mashed potatoes (prepared)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter

Instructions

  • 1. Preheat oven to 375°F (190°C). Grease a 9×5 loaf pan.
  • 2. In a bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  • 3. Mix gently until just combined, then press mixture evenly into prepared loaf pan.
  • 4. Bake uncovered for 40–45 minutes, until meatloaf is cooked through.
  • 5. Spread mashed potatoes evenly over the top of the baked meatloaf.
  • 6. Sprinkle shredded cheddar cheese and dot with butter.
  • 7. Return to oven and bake for 10–15 minutes, until cheese is melted and lightly golden.
  • 8. Let rest for 5 minutes before slicing and serving.

Notes

  • For extra flavor, use a mix of ground beef and pork.
  • Swap cheddar with mozzarella or Monterey Jack for a melty topping.
  • Leftovers reheat beautifully in the oven or microwave.
