Ingredients

  • 4 white fish fillets (cod, haddock, or tilapia)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, sliced
  • 1 lemon, sliced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  • 1. Preheat oven to 400°F (200°C).
  • 2. Place fish fillets in a lightly greased baking dish.
  • 3. Drizzle olive oil and lemon juice over the fish.
  • 4. Season with garlic, oregano, paprika, salt, and pepper.
  • 5. Scatter cherry tomatoes and olives around the fish.
  • 6. Top with lemon slices.
  • 7. Bake uncovered for 15–18 minutes until fish flakes easily with a fork.
  • 8. Garnish with fresh herbs and serve warm.
