1 (15 oz) can chickpeas, drained and rinsed
1 (15 oz) can cannellini beans or white beans, drained and rinsed
1/2 cup cherry tomatoes, halved
1/2 English cucumber, diced
1/4 cup red onion, finely chopped
1/3 cup Kalamata olives, sliced
1/4 cup crumbled feta cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh oregano or basil, chopped
Dressing:
3 tbsp olive oil
2 tbsp fresh lemon juice
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
1. In a large bowl, combine chickpeas, white beans, tomatoes, cucumber, red onion, olives, feta, and fresh herbs.
2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
3. Pour dressing over the bean mixture and toss gently to combine.
4. Taste and adjust seasoning as needed.
5. Refrigerate for at least 20 minutes before serving to allow flavors to meld.
6. Serve chilled or at room temperature.
Add diced bell peppers for extra crunch.
Omit feta for a vegan version.
