  • 1/4 cup baby spinach
  • 23 tomato slices
  • 23 cucumber slices
  • 1 tbsp red onion, thinly sliced
  • 12 tsp olive tapenade or chopped olives (optional)
  • Fresh herbs (parsley or basil), optional

Instructions

  • 1. In a small bowl, whisk eggs with milk, salt, and pepper.
  • 2. Heat olive oil or butter in a nonstick pan and scramble or fry the eggs to your liking.
  • 3. Toast the sandwich roll, ciabatta, or pita.
  • 4. Spread hummus on the toasted bread.
  • 5. Layer on the cooked eggs followed by feta, spinach, tomato, cucumber, and red onion.
  • 6. Add olive tapenade or chopped olives if using.
