Mediterranean Chicken Gyros with Creamy Feta Tzatziki

- 1 1/2 lbs boneless skinless chicken thighs
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp red wine vinegar
- 2 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and black pepper, to taste
- 4–6 pita breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup romaine lettuce, shredded
- For the Feta Tzatziki:
- 1 cup Greek yogurt
- 1/2 cup cucumber, grated and squeezed dry
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp fresh dill, chopped
- 1/2 cup crumbled feta cheese
- Salt and black pepper, to taste
- 1. In a bowl, whisk together olive oil, lemon juice, garlic, vinegar, oregano, paprika, cumin, salt, and pepper.
- 2. Add chicken, toss to coat, cover, and marinate at least 30 minutes (up to overnight).
- 3. Heat a skillet or grill pan over medium-high heat and cook chicken 5–6 minutes per side until fully cooked.
- 4. Let chicken rest, then slice thinly.
- 5. For tzatziki: mix Greek yogurt, cucumber, garlic, lemon juice, dill, and feta until creamy. Season with salt and pepper.
- 6. Warm pita bread, then fill with sliced chicken, veggies, and a generous spoonful of feta tzatziki.
- 7. Serve immediately.
Notes
- For a lighter version, use chicken breast instead of thighs.
- Try adding Kalamata olives for extra Mediterranean flavor.
- Pita can be swapped with naan or flatbread.
