Mediterranean Chicken Gyros with Creamy Feta Tzatziki

Juicy marinated chicken wrapped in warm pita bread and topped with creamy feta tzatziki, crisp veggies, and Mediterranean spices.

  • 1 1/2 lbs boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp red wine vinegar
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and black pepper, to taste
  • 46 pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup romaine lettuce, shredded
  • For the Feta Tzatziki:
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp fresh dill, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper, to taste

Instructions

  • 1. In a bowl, whisk together olive oil, lemon juice, garlic, vinegar, oregano, paprika, cumin, salt, and pepper.
  • 2. Add chicken, toss to coat, cover, and marinate at least 30 minutes (up to overnight).
  • 3. Heat a skillet or grill pan over medium-high heat and cook chicken 5–6 minutes per side until fully cooked.
  • 4. Let chicken rest, then slice thinly.
  • 5. For tzatziki: mix Greek yogurt, cucumber, garlic, lemon juice, dill, and feta until creamy. Season with salt and pepper.
  • 6. Warm pita bread, then fill with sliced chicken, veggies, and a generous spoonful of feta tzatziki.
  • 7. Serve immediately.

Notes

  • For a lighter version, use chicken breast instead of thighs.
  • Try adding Kalamata olives for extra Mediterranean flavor.
  • Pita can be swapped with naan or flatbread.
