Mexican Chicken with Cheese Sauce

A delicious dish with tender chicken breasts smothered in a creamy, zesty cheese sauce, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 2 teaspoons paprika
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 cup extra sharp cheddar cheese, shredded

Instructions

  1. Evenly coat the chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, cumin, salt, and pepper. Let it sit while preparing the cheese sauce.
  2. Heat a skillet over medium-high heat, add oil, and sear the chicken until golden brown and cooked through. Set aside to rest.
  3. In a small saucepan, melt butter over medium heat and add flour, whisking to form a roux until golden.
  4. Gradually whisk in milk, stirring to avoid lumps until the mixture thickens. Add salt, cayenne pepper, and paprika.
  5. Remove from heat and stir in shredded cheddar cheese until melted and smooth.
  6. Plate the chicken and pour cheese sauce over it. Garnish with parsley or cilantro.

Notes

For extra flavor, serve with rice, tortillas, or a fresh salad. Adjust cayenne pepper to taste.
